Healthy vegan crepes
50 g red lentil flour (i just blend red lentils in my vitamix)
40 g oat flour
1 small tsp flaxseed meal
2 tbsp date syrup or other liquid sweetener of choice (i use flavdrops from myprotein with vanilla taste)
cinnamon/vanilla (optional)
plantmilk or water (water will give you less taste, but if you’re using enough sweetener it’s absolutely fine)
1-2 tsp baking powder
Option with banana:
just add half a really ripe banana to your batter.
How to:
Mix all dry ingredients together and add plantmilk/water and date syrup/liquid sweetener (if making the option with banana, i suggest to put everything in a blender and mix until you have a runny batter, so you won’t have any banana pieces in it). You have to add a lot of milk/water, the batter should be really runny! let the batter sit for around 10 minutes and preheat a non-stick skillet on medium heat. add 1/3 of the batter and smooth it down. flip the crepe when bubbles start to appear, so you can easily remove it with a spatula and bake it from the other side until it gets lightly brownish. flip another few times and bake the next one. you can make 3 small or 2 middle crepes out of the batter (like you see them in the picture). Fill or top them with whatever you want and enjoy! :)
